One of the most popular southern side dishes, fried tomatoes are not only easy to make, but they are also delicious and nutritious! Tomatoes are a good source of vitamin C, potassium, and dietary fiber. And when you fry them up in a little oil, they become a crispy, savory snack or side dish that everyone will love!

There are many recipes for fried tomatoes, but this is one of my favorites:

Fried Tomato Recipe

Ingredients:

1/2 teaspoon garlic powder 1/4 teaspoon onion powder 1/4 teaspoon black pepper 1/4 teaspoon cayenne pepper 1/4 teaspoon salt 2 tablespoons all-purpose flour 2 tablespoons cornmeal 1 large egg, beaten to blend 3 tablespoons milk 2 tablespoons olive oil or vegetable oil 1 1/2 pounds ripe tomatoes (about 4 large), peeled if desired and each cut into 8 wedges*

Instructions:

  1. Preheat oven to 425 degrees F. Mix first 5 ingredients (garlic powder through salt) in small bowl. Season mixture to taste with pepper. Sprinkle seasoning over both sides of tomato wedges.

  2. Place flour and cornmeal in shallow dish. Place egg and milk in another shallow dish. Dip tomato wedges in egg mixture, then coat evenly with flour mixture.

  3. Place tomato wedges on baking sheet coated with cooking spray. Drizzle tomatoes with oil. Bake until coating is golden brown and tomatoes are tender, about 25 minutes. Serve warm or at room temperature.

Drizzle the remaining 2 tablespoons of oil over the top of the tomatoes. Bake for 25 minutes in the preheated oven, or until tender and golden brown. Sprinkle with Parmesan cheese and serve hot.
