Ingredients:
-2 tablespoons olive oil -1 large onion, diced -3 cloves garlic, minced -1 teaspoon dried oregano -1/2 teaspoon salt -1/4 teaspoon black pepper -1/4 teaspoon cayenne pepper -4 cups diced tomatoes (about 2 pounds) -1/4 cup all-purpose flour -2 tablespoons butter -3 tablespoons chopped fresh parsley leaves Directions: 1. Heat olive oil in a large skillet over medium heat. Add onion and garlic, and cook until softened, about 5 minutes. Stir in oregano, salt, black pepper, and cayenne pepper. Add tomatoes, and bring to a simmer. Cook until tomatoes are soft, about 10 minutes. 2. In a small bowl, whisk together flour and butter until smooth. Stir into the tomato mixture. Bring to a simmer and cook until thickened, about 15 minutes. Stir in parsley leaves before serving. Enjoy!

Ingredients:
1 pound bacon, diced
1 pint cherry tomatoes, halved
1/4 cup red wine vinegar
1 tablespoon honey
1 clove garlic, minced
Kosher salt and freshly ground black pepper, to taste
2 tablespoons olive oil, divided
3 cups baby spinach leaves Instructions:

Add bacon to a large skillet over medium heat and cook until crispy, about 8-10 minutes. remove bacon with a slotted spoon to a paper towel-lined plate.

In the same skillet, add cherry tomatoes, red wine vinegar, honey, garlic, salt and pepper, to taste. Cook until tomatoes are slightly softened, about 3-5 minutes; set aside.

Heat olive oil in a large skillet over medium heat. Add spinach leaves and cook until wilted and tender, about 2-3 minutes.

Divide bacon, tomatoes and spinach among serving bowls; enjoy!

Ingredients:
-6 vine-ripened tomatoes, sliced thick -1/4 cup olive oil -1/4 cup balsamic vinegar -1 tablespoon honey -1 teaspoon dried oregano -1/4 teaspoon salt -Freshly ground black pepper to taste -6 cups fresh spinach leaves, tough stems removed -1/2 cup crumbled feta cheese Directions: Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, combine olive oil, vinegar, honey, oregano, salt and pepper. Add tomato slices and spinach; toss to coat.
Arrange tomato mixture in a single layer on a baking sheet. Bake for 12 minutes. Remove from oven and sprinkle with feta cheese. Serve immediately.

Ingredients: 1/2 recipe of pie crust (homemade or store-bought) 3-4 tablespoons olive oil, divided 1 large onion, diced 2 cloves garlic, minced 1 cup chopped fresh tomatoes, plus more for topping 1/4 cup chopped fresh parsley, plus more for topping 1/4 cup grated Parmesan cheese, plus more for topping salt and pepper to taste
Instructions: 1. Preheat oven to 375 degrees F (190 degrees C). 2. On a lightly floured surface, roll out the dough to 1/8-inch thickness. Transfer to a 9-inch pie dish. Trim the edge of the dough even with the edge of the dish. Prick the bottom of the dough all over with a fork. Bake in the preheated oven for 8 minutes. Cool on a wire rack. 3. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the onion and garlic and cook until soft, about 5 minutes. Add the chopped tomatoes and parsley, and cook until soft, about 5 minutes more. Season with salt and pepper to taste. Spoon mixture into the cooled pie crust. 4. Sprinkle Parmesan cheese over top of the tart. Drizzle remaining 1-2 tablespoons olive oil over top of cheese. Bake in preheated oven for 20 minutes, or until golden brown on top

Ingredients:
-1/2 cup marinara sauce -1/2 cup mozzarella cheese, shredded -4 Roma tomatoes, sliced -2 tablespoons olive oil -4 slices of Italian bread -1/4 teaspoon salt -1/4 teaspoon black pepper -1 tablespoon butter, softened -1 clove garlic, minced -Fresh parsley leaves, for garnish (optional)
Instructions:

Preheat oven to 350 degrees.

In a bowl, mix together marinara sauce and mozzarella cheese. Set aside.

In a separate bowl, mix together olive oil, salt, and black pepper.

Place tomato slices on a baking sheet. Drizzle with olive oil mixture and bake in preheated oven for about 10 minutes or until tomatoes are slightly softened.

Meanwhile, spread butter on one side of each slice of Italian bread. Broil the bread in the oven for about 1 minute or until lightly toasted. Remove from oven.

To assemble the sandwich, place 2 roasted tomato slices on each slice of broiled Italian bread. Top with mozzarella cheese mixture and garnish with fresh parsley leaves if desired
